These summaries of the Dubois County Health Department’s inspection reports are made public after the restaurants and food stores have had 10 days to respond. Two noncritical violations: floors and wall hoods in kitchen have built-up grease; mold observed on top of wall beside ice machine.

Holiday Foods #3, 1815 Main St., Ferdinand, two critical violations: observed deli employee put on gloves before washing hands prior; and dust, dirt and mold buildup in juice/milk units, walls and floors in deli, ceiling tiles in produce area and fans in refrigeration units throughout establishment. Two noncritical violations: failure to remove dead flies from dairy area; damaged walls/ceilings in produce storage area.
